Apple Spiced Cake

As much as I do love a great apple pie, there is something so elegant about an spiced apple cake!Today I have used Granny Smith apples. Any baking apple will do, as you want the apple pieces to hold their shape. I have spiced this with cinnamon, fenugreek, clove, nutmeg, ginger, cardamom and lemon zest. And to that a touch of Metaxa cognac.

This was so easy to throw together in a pinch! This version is low carb and based in a mixture of almond and coconut flours. And I used a sugar free sweetener. I gave allulose a try, but use your favorite one.

The beauty of this recipe is that I have made it with all purpose flour and sugar in the past. And it can be made using any gluten free flour blend that you love. Simply exchange the 1 cup of almond flour for your preferred flour. And do the same for your preferred form of sugar.

Ingredients:

1 cup almond flour (or all purpose flour/ gluten free is interchangeable in this recipe)

1/4 cup coconut flour (omit if using regular or gluten free flour)

1 tbs baking powder

1/4 tsp salt

1 stick of butter (room temperature)

1/2 cup of sugar free sweetener or sugar

2 eggs (room temperature)

2 tbsp Metaxa (cognac or brandy)

1 tbsp vanilla extract

2 large or 3 small diced apples

1 tsp cinnamon

1/4 tsp ground fenugreek

Zest & juice of 1 lemon

1/4 tsp ginger

1/4 tsp cloves

1/4 tsp nutmeg

1/4 tsp cardamom

Directions:

Allow the eggs and butter to come to room temperature. Preheat the oven to 350 F.

Core and dice your apples. I used Granny Smith apples and decided not to peel them. However, you can peel them if you prefer. Toss this with the lemon juice, so that the apples do not brown.

Mix your dry ingredients in a small bowl. Cream the butter and sweetener for five minutes with your mixer. Add in the eggs and the wet ingredients (including the lemon zest) and beat together. Add in the dry mixture a little at a time. Stir in the apples.

Pour into a well greased springform or cake pan.

Bake for 50 minutes or until golden brown.

Garnish with powdered sugar (or sugar free sweetener) and cinnamon.

Perfect with a cup of tea!
