I was given a bag of oranges recently and so wanted to make a dessert using a few of them. This beautiful orange bundt cake is fragranced with three aromatic oranges, using both the zest and the juice. Then it is spiced with cinnamon, nutmeg, cloves and vanilla extract.
You can spoon the batter into mini bundt cake pans, or create one standard size cake. Whatever our heart desires. I actually got 18 small bundt cakes out of this batter. I had given away six to my neighbors before photographing them.

Ingredients:
3 cups of all purpose flour
Zest & juice of 3 oranges
1/2 cup olive oil
1/4 cup Greek yogurt
2/3 cups sugar
1 tbsp baking powder
1/2 tbsp baking soda
1/4 tsp salt
1 tbsp vanilla
1 tbsp cinnamon
1/2 tsp nutmeg
1/4 tsp cloves
powdered sugar to garnish
Directions:
Preheat the oven to 350 F.
Beat the eggs and the sugar for five minutes on high until frothy. Add in the vanilla. Sift in the flour, baking powder, baking soda and salt. Beat to incorporate. Add in the zest, orange juice, olive oil, yogurt, vanilla, cinnamon, clove and nutmeg. Once again, beat to thoroughly incorporate.
Pour the batter into a prepared baking pan. I made 18 mini Bundt cakes from this. Alternatively, pour it into a 9 inch spring form pan or standard sized bundt pan.

Bake for 45 minutes or until the cake is golden brown and you can pierce it with a toothpick that comes out clean.
Let it cool and finally garnish with powdered sugar.
