Summer Berry Terrine

This summer berry terrine is perfect for those hot days of summer! Light and refreshing. What is rather awesome is that I found a way to make this sugar free without adding any alternative sweeteners. How you might ask? The liquid to make the jello is made with coconut water, which is already naturally sweet, refreshing and actually pretty darn full of beneficial electrolytes and potassium. So yes, I made a beautiful dessert that is actually great for your body! (patting myself on the back for this one)

Of course berries are low in natural sugars, and perfect for anyone watching their carbohydrates. Plus they are high in antioxidants, vitamins and rich in fiber. Gelatin promotes healthy joints, hair, skin, nails and gut health. Has the essential amino acids that you need to build protein.

If you think about it, its the perfect summer dessert! Get some health benefits while enjoying a slice of dessert. And it’s low in calories to boot! Win, win!


2 cups of coconut water

juice of 1/2 a lime

pinch of of salt

2 packets of unflavored gelatin

16 oz container of fresh strawberries

6 oz container of fresh raspberries

6 oz container of fresh blueberries


Wash the berries. I sliced the strawberries, but you can also quarter them. Drain them and set them aside in an 8×4 inch loaf pan, which is the standard size that most of us have.

Pour 1/2 cup of the coconut water into a small pot. Sprinkle the gelatin over it and allow it to bloom for around five minutes. No need to stir it. Then bring that to a simmer, whisk it to dissolve, and add in the rest of the coconut water. Remove from heat and let it cool for 10 minutes. Pour that into the loaf pan with the berries in it.

Let it set in the refrigerator for 4-5 hours, or overnight.

When you are ready to unmold it, run some hot water on the sides of the loaf pan, being careful not to get the dessert wet. Gently run a blunt knife around the perimeter to separate it and turn it over onto your serving dish. Blot any excess liquid and place it back in the refrigerator for an hour to set again.

Slice it and serve with a little whipped cream!
