Grapefruit Cucumber Mint Salad with Feta

Grapefruit cucumber mint salad with feta.

This recipe is low carb and paleo friendly. On a hot day, it is mighty refreshing! My wonderful friend left some citrus fruits for me from our other friends trees!


Grapefruit is known to help stabilize your insulin levels and they are generally low in carbs. Hard to resist fresh fruit picked right off of a tree!

Ingredients:

1 small grapefruit


1 Persian cucumber


handful of mint leaves

1 tbsp roasted pumpkin seeds


Crumbled feta cheese


Salt & pepper to taste

1 tbsp olive oil

1/2 tsp balsamic vinegar

a touch of honey or yakon syrup (optional) to help cancel the bitterness of the grapefruit.

Directions:

Slice your grapefruit, removing the peel and pith. I like to simply slice them into pretty rounds, and then cut smaller pieces.

Slice your cucumber. Coarsely chop the mint. Add in the pumpkin seeds and feta cheese.

Salt & pepper to taste. Drizzle the olive oil, the balsamic & either the yakon syrup or honey.

Toss together and enjoy!
