Roasted Spicy Cauliflower

Roasted spicy cauliflower florets. So simple! I promise you that you will devour this cauliflower! I have never ever devoured cauliflower. I eat it because it’s good for me. But I nearly ate the whole thing in one sitting.

Ingredients:

1 head of cauliflower

Salt & pepper to taste

1 tbsp onion powder

1 tsp garlic powder

2 tbsp hot sauce

1 tbsp olive oil

1 tbsp bacon fat

Directions:

Cut your whole cauliflower in half. Slice out the core (which you can save for a nice vegetable stock). Slice up the cauliflower. In a large bowl toss it with salt, pepper, onion/garlic powders, olive oil, & melted bacon fat (for that smoky flavor) and hot sauce.

I wanted it spicy so I was generous. You do you & make it as spicy as you like!

Lay it out on a sheet pan. Spread them out to give room for the cooking so that they don’t steam from the overcrowding.

Roast at 400 F for 50 minutes, turning them once at the halfway point.

Sprinkle some tajin on top & lime! And it’s ready to be devoured.
