One of my favorite things that my mother used to make when we were kids was her famous chicken nuggets. No, they weren’t like the McDonald’s or other fast food kind. These were so much better! And we loved them with ketchup!

She would use cubed chicken breast & simply toss them in seasoned Wondra flour, which she had ample supply of. Then fried them in olive oil. Super simple & quick.

So how did I make them keto, paleo & gluten free? I switched out the flour for baking powder. That’s it! It gives a great crispy crust.
Ingredients:
2 chicken breasts cubed
4 tbsp baking powder
1 tsp salt
1/2 tsp pepper
1 tsp paprika
1/2 tsp chili powder
1/2 tsp garlic powder
1 tsp onion powder
1 tbsp dry thyme
Olive oil for frying
Directions:
Heat up your olive oil in a pan.
Cube up your chicken breast. Toss all of the dry spices in a bowl. Then toss the cubed chicken with the dry ingredients to fully coat.
Fry up the pieces till golden brown, crispy and fully cooked. Drain on a paper towel.

Serve with ketchup or ranch or whatever you love them best.
