Just roasted some pumpkin seeds with melted butter, crushed dried rosemary & habanero sea salt!!! Such exciting layers of flavor!
TO DIE FOR!!!! I have always had pumpkin seeds on hand because they help to combat candida. You don’t need much! And I usually have a few with my Greek yogurt. However, roasting them with the spice mixture is a fun way to eat them.
They are super high in antioxidants and help to reduce inflammation. They are one of the best sources of magnesium, which helps regulate blood pressure, insulin levels, healthy bones. They are also high in fiber, aiding in digestion. An ounce of pumpkin seeds has 14g of fat & 2.4 net carbs. Perfect for keto!

1 bag raw pumpkin seeds (16 Oz.)
1/3 stick of butter melted
1/2 tsp sea salt
1/2 tsp habanero chili pepper powder
1/2 dry rosemary
Toss your dry spices together, and then toss that mixture with the raw pumpkin seeds. Melt your butter. Then pour that into the bowl of dry spiced pumpkin seeds. Spread them out in a pan.
Roast in the oven at 300 F for 45 minutes or until this gorgeous golden brown. Stir them once or twice while roasting.
They are a bit addicting! You have been warned. 😉
