Ahhh yes!!!! I just made the most delicious flatbread pizza for two with Cut da Carb low carb flatbreads!!!! Fresh figs, prosciutto, arugula, grated fontina cheese and goat cheese. This is amazing! You will need one flat bread per person.
You can find their product at http://www.cutdacarb.com. Their flatbread is very versatile. You can create so many dishes with it, from savory to sweet. They are a foot long, lavash style, and very thinly stretched.

Ingredients:
1 cutdacarb flatbread
2 tsp extra virgin olive oil
3 tbsp grated fontina cheese
3 tbsp goat cheese
3 sliced fresh figs
2 slices of prosciutto
A handful of arugula
A drizzle of balsamic vinegar
Salt & pepper to taste
Directions:
Preheat the oven to 400F.
Start by brushing the the flatbread with the olive oil. Bake it just to crisp up the edges at first. Then add the fontina & goat cheeses, along with the sliced figs. Bake again till the cheese is melted. Then add on the prosciutto & arugula, a little bit more of the fontina on top. Return to the oven a few more minutes. Remove & drizzle with a little olive oil, balsamic, salt & pepper.

Slice it in half & enjoy!!!! Your total baking time is about 15 minutes. I just did it in layers because I really wanted to achieve a crispy texture. Let the oven heat up before you start popping it into the oven.
