While bone marrow is truly an old world food, over the past few years it has become a new found sensation to restaurant goers.

I grew up eating it usually as part of my mother’s beef bone soups. It was always my favorite part of the soup! Literally sucking this meat candy right out of the thick bones.
It is very easy to make too! All you need are the bones, salt, pepper & olive oil.
Ingredients:
Beef bones with marrow
Sea salt
Pepper
Drizzle of olive oil
Directions:
Soak your bones in salted cold water for 12 hours changing the water every 4 hours. Keep them in the refrigerator. This will release any blood & impurities in the bones.
Preheat oven to 450 F.
Pat them dry & lay them standing up on an aluminum lined baking sheet. Sprinkle coarse salt & pepper. Drizzle olive oil.
Roast them for 20-30 minutes. You will know when they are done. I pierce the longest one with a knife to be sure that it goes through & the barrow is softened.
Now you can simply add another sprinkle of salt & a little lemon juice & spoon it out of the bones, spread it on crusty bread.

Or you can garnish it and be a little fancy! I chopped up a small shallot with a little thyme & rosemary, lemon zest, salt, pepper & lemon juice. Spooned that on top & gave my bone marrow some next level flavor!
Eat it any which way you choose!
