Salmon Patties

One of the healthiest fish that you can eat is salmon. It is full of the wonderul omega -3 fatty acids, high in protein and vitamin D. And it tastes great too!

I have made it multiple ways, from baked to fried. This is a recipe for salmon patties or salmon fish cakes. There is no need to use canned precooked salmon for this. As you will see, I am starting out with raw fish!

A wonderful thing to note is that the natural fat present in salmon acts as binder, so in making my patties I did not need to add anything to hold it all together, such as an egg, mayonnaise or breadcrumbs. Note that the Atlantic salmon is fattier than wild salmon. The more fat, the easier it will bind together. If it isn’t holding then add a litle bit of mayonnaise to help you out.

Start out with a pound of Atlantic salmon and remove the skin with a sharp knife. Then cube it and finally mince it right on your chopping block! You don’t even need to pull out the food processor for this one. Who wants to clean it up anyway!

Ingredients:

1 lb. raw salmon (I used Atlantic salmon because its fattier)

a bunch of scallions

1 tbsp chopped parsley

1 tbsp chopped dill

1 tsp salt

1/2 tsp pepper

juice of 1/2 a lemon

Directions:

As stated above, remove the skin from the salmon and cube the salmon into pieces. Using your knife, chop the salmon until it is finely minced. You can transfer that to a bowl or keep it all together on your cutting board. Add in your scallions, dill, parsley, salt, pepper and lemon juice. Mix it all together.

Heat up your pan to medium and drizzle just a litle bit of olive oil. You don’t need much becuase this fish is already quite fatty, and it will release some of that fat into the pan. Form your patties. I made mini patties. Think sliders! This gave me a total of 10 patties.

Now you can serve them however you like! I made a quick dressing with mayonnaise, mustard, salt, pepper and lemon juice. Mix that all together. And then we ate them wrapped low carb tortilla with some baby romaine lettuce.
