Spicy Hot Dog & Halloumi Soup! Completely keto too!!
I am a bit shocked at how good this soup was. And honestly, it goes to show that with a little imagination you can pretty much create anything you want!
My husband wanted some soup one night after we came back from a visit to the beach on a chilly evening. In my mind I was thinking about what I already had at home and pretty much just made up this recipe in my head on the ride back home.
In the fridge I knew I had some bone broth, hot dogs, halloumi cheese, harissa and tirokafteri for sure. Then all other things got tossed in to enhance the flavor and spice it up!

George loved this soup so much that I made it twice that week!

Ingredients:
2 cups of bone broth
2 cups of water
1 shallot
1 celery stick
A package of hotdogs
1 package of halloumi cheese
1 tbsp of harissa
2 tbsp of spicy feta cheese spread (if you have it)
Salt & pepper to taste
1 tbsp butter
Sprinkle of dry oregano
Directions:
In a medium size pot, melts pat of butter to sauté finely chopped shallots & celery. Toss in sliced hot dogs. Add in bone broth and water. A tbsp or two of harissa sauce. A tbsp of the tirokafteri (spicy feta cheese spread) I made. Chopped pieces of halloumi cheese from Cyprus. Salt & pepper to taste.
Bring that all to a boil and simmer for around 20 minutes. A little dry oregano at the end. Generous squeeze of lemon or lime. And that’s it!
(Always add oregano at the end of cooking sauces and soups as it tends to become bitter when cooked too long.)
