Karpouzopita -Watermelon Pie from Milos

In Greece, we will turn just about anything into a pita. And that includes this wonderful and unique pita made of watermelon, call karpouzopita, from Milos in the Cyclades!

Greek watermelons are some of the sweetest varieties that you will ever eat!

My good friend Demetra is from Milos, and she shared this recipe with me.

She mentioned that if the watermelon is very sweet, then you may not need to add any sweetener. So feel free to post it be ear!

Ingredients:

3 1/2 cups diced watermelon (small pieces)

1/3 cup flour 

1/4 tsp salt 

1 tbsp sugar 

1/4 cup honey 

3 tbsp olive oil  (a little more to coat the pie dish)

1/4 cup sesame seeds

Directions:

Dice up the watermelon. Discard any seeds. Toss with the sugar & drain in a colander for 30 minutes. The sugar will macerate the watermelon. (Reserve the liquid for a fun cocktail if you like).

In a medium bowl, using a spoon, gently mix with flour, olive oil, salt, & honey.

Coat your pie pan with olive oil and sesame seeds. Pour the mixture into a standard pie dish. It will be thin in its depth. Coat with more sesame seeds. 

Bake for an hour to 75 minutes at 350 F.

Let it cool on the counter for about an hour and cut into small pieces. It has a jelly like consistency. Very light. I promise that you have never eaten anything this unique before!
