Slow Cooked Pork Butt

This recipe is amazing to make pork carnitas tacos with! You can use the same recipe and serve it as pork gyro with tzatziki and a keto pita!

I make this in my crockpot, slow cooked for four hours on high, with beautiful aromatics! The kitchen will smell amazing!

Recipe:

3-4 lb pork butt.

1 onion

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp cumin

Juice of two limes or lemons

Juice of two oranges

2 cups of bone broth

I cut up the pork butt into a few big chunks. Thickly slice the onion. Toss in a mixture of salt, pepper, cumin, the juice of two limes & the juice of two oranges. Pour in two cups of bone broth into the crockpot & add the pork butt mixture. Set it on high for 4 hours.

When it is done, take three cups of the juices and boil it uncovered on high to create a reduction. I reduced it to half. You will use this to caramelize the shredded pork in the oven, in its own flavorful fat.

While you are making the reduction, shred the pork. I use two forks and start pulling it apart.

After you have reduced the liquid, and pour it over the shredded meat.

Broil on high to give it a beautiful caramelized color. Turn it a few times to brown multiple sides.
Garnish with fresh lime, or lemon. Add cilantro or any other favorite herbs you like.

Serve however you wish!

We stick to keto, so I sometimes serve these with a cheese shell taco shell, which are super easy to make!
Same week I also served this as a gyro with keto friendly pita bread & tzatziki!
