Chocolate Tahini Orange Olive Oil Cake.
This is lightly sweet, earthy, and a little floral. Perfect with coffee or tea.

Ingredients:
2 1/2 cups flour
4 eggs
1 cup of sugar
1 cup olive oil
1/4 cup Greek yogurt
Zest of 2 oranges
1/4 cup hot water
1 shot of bourbon or brandy
2 tbsp tahini
1/2 cup cocoa powder
1 tsp instant coffee
1 tsp cinnamon
1/4 tsp cardamom
1/4 tsp salt
1 tbsp baking powder
1/2 tsp baking soda
Directions:
Mix the sugar with the orange zest to release the flavor. Whisk in the eggs one at a time till fluffy. Add in the vanilla, cinnamon, cardamom, olive oil, yogurt, bourbon or brandy.
In a separate bowl mix the flour, baking powder, baking soda & salt.
Mix into the liquid mixture.
Heat up the water and mix that hot water with the cocoa and the coffee & the tahini and mix well. Add that to the rest of the batter.
Mix together.
Pour into a prepared 9 inch springform pan. Bake for 1 hour at 325 F or until a toothpick comes out dry.
Let it cool and dust with a little powdered sugar.
