Tiropita Kouro – shortcrust cheese pies

One of my favorite types of Greek pastry dough is this savory kourou. It is based in yogurt and olive oil with a bit of grated cheese in it. The dough comes together in nearly five minutes. And of course you can fill them with anything you like.

I filled these with feta, kasseri & halloumi cheeses.

Now, if you want to create a sweet dough, I suggest omitting the cheese & adding a tbsp of sugar to it instead. Sky’s the limit!

Ingredients:

Dough
1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1 tbsp grated mizithra cheese (I used pecorino)
1/4 cup Greek yogurt
1/4 cup sunflower oil
2 tbsp extra virgin olive oil
1 tbsp apple cider or red wine vinegar

Filling:

1 cup feta cheese (crumbled by hand)
2 tbsp Greek yogurt
1/2 cup any other cheese (kasseri & halloumi)
A drizzle of extra virgin olive oil
1/4 tsp black pepper
fresh or dry herbs (I used dry savory, oregano & thyme)

Directions:

Mix all of the dough ingredients by hand just to combine. Let it rest while you make the filling.

In another bowl, mix the filling.

Divide the dough into 8 pieces. Roll each one out on a lightly floured surface and place a heaping tsp of filling in it. Fold over the kourou pastry dough & crimp with a fork. Brush with a little egg wash and sprinkle sesame seeds if you like.

Bake at 350 F for an hour or until golden brown. The moment they were golden brown and ready, the whole apartment was filled with their aroma!
