Kormos Mosaiko (Chocolate Salami)

This classic easy dessert uses simple ingredients that you might already have at home. It goes by a few names. Kormos means trunk, like a tree trunk. Mosaiko means mosaic because of the mosaic pattern of the cookies and nuts. And in Cyprus, it is called Doukissa, which means duchess. This is of course a cross cultural dessert with many names, including chocolate salami because it resembles such. And it’s fun to see the various ways that this can be made! 

This is a simple recipe. Tried and true. Anyone can make it. In Greece we usually prefer the Papadopoulos petite buerre cookies or the Miranda cookies because of their mild flavors.

The basics are butter, cocoa powder, powdered sugar, butter cookies, nuts. Greeks add brandy to the mix. I add a few other ingredients that I love as well. 

Ingredients: 

2 stick butter

1 cup powdered sugar 

1/3 cup cocoa powder 

1 tsp coffee 

Zest of 1 orange 

1/4 tsp sea salt 

1 package of petite buerre cookies (Papadopoulos)

1/2 cup walnuts 

1 shot brandy 

Melt butter. Whisk in the powdered sugar, cocoa, coffee, salt & orange zest. 

Break up the cookies. Toss them with the brandy. Add walnuts. Add in the chocolate mixture. Mix together.

Pour that onto a large sheet of parchment paper. Spreading it out long and the roll it up. Wrap that with Saran Wrap and then roll that up twisting the ends together.

Freeze for at least 2 hours. 

Dust with powdered sugar, slice and enjoy!
