Tiramisu

My husband’s favorite dessert is tiramisu. Hands down! If tiramisu is on the menu, he is ordering it for dessert!

What’s not to love about this Italian classic? Coffee soaked lady fingers, luscious mascarpone, cocoa powder. It doesn’t take long to make it either.

I made it yesterday for our 24th wedding anniversary!

Make the coffee first. Add Marsala wine, a quintessential ingredient.

Let the eggs come to room temperature. Something to note is that authentic tiramisu is made with raw eggs which are somewhat “cooked” in the process of whipping with sugar. I suggest finding the best quality and freshest that you can find. I buy the eggs the morning that I will make this.

You will need two boxes of lady fingers, but you will use 1 1/2 packages. Save the rest for dipping into your coffee.

Let’s look at the process.

Ingredients:

4 eggs

10 tbsp granulated sugar

3 (8 ounce) containers of mascarpone

1/2 cup heavy cream

1 1/2 packages of lady fingers cookies

2 cups of strongly brewed coffee (espresso is authentic)

1/2 cup of Marsala wine

2 tbsp cocoa powder

Directions :

Start by making the coffee & setting it aside. You can slightly sweeten it if you like. Add the Marsala wine to this.

It’s important that your eggs are at room temperature. Separate them into mixing bowls. Set aside the bowl with the egg whites.

To the bowl with the yolks, add 5 tbsp of sugar (reserve the other 5 for the egg whites). Whip till pale yellow. Add in the mascarpone & heavy cream & whip again till combined and fluffy. Set aside.

Whip up the egg whites adding the sugar a tablespoon at a time, till glossy stiff peaks. The egg whites should be so well that if I turned the bowl upside down, they won’t spill out.

Now fold the whites into the mascarpone mixture 1/3 at a time till combined. You are folding so that you don’t lose the fluffiness that has been accomplished.

Now let’s assemble our tiramisu!

This recipe is perfect for a 9×12 pan. Dip each lady finger into the coffee and lay them out in your pan. After you make one layer, ladle half of the mascarpone mixture over that. Then make a second layer of lady fingers, followed by the rest of the cream.

Finally dust it with cocoa powder. Let it set in the fridge for 4-6 hours. It’s even better the next day!
