Apple Cider Walnut Olive Oil Cake

You will absolutely love this beautiful cake! As we are still keeping Lent, I wanted to make a lent appropriate or vegan cake. Gotta have something a little sweet you know!

I used olive oil instead of butter. And no eggs.

It is very easy to make!

Ingredients:

2 cups of flour

1 cup sugar

1 tsp baking soda

1 tbsp baking powder

1/2 tsp salt

1 cup apple cider vinegar

Zest & juice of 1 lemon

1/3 cup olive oil

1 tbsp cinnamon

1/4 tsp clove

1/2 tsp powdered ginger

1/2 tsp nutmeg

1 Tbsp vinegar

1 tsp vanilla

1/2 cup ground walnuts

Directions:

Stir the wet ingredients together in a large bowl. Mix the dry ingredients in a smaller bowl and add them to the wet ingredients till combined. Add in the chopped walnuts.

Pour the batter into a prepped 9 inch springform pan. Bake at 325 F for an hour, or until the toothpick comes out dry in the center.

Let cool to room temperature before dusting it with powdered sugar.

It’s perfect with a cup of coffee or tea.
