Apricot Clafoutis

This is such a beautifully silky treat! Barely sweet custard studded with apricots. Stone fruit are in season and I had 8 apricots that were sitting in a bowl getting ripe.

Clafoutis is a French dessert. A baked custard usually made with cherries.

I used both fragrant orange & lemon zest in mine.

And the recipe is so very simple! It’s best eaten warm. Dust it with a bit of powdered sugar. Perfect for brunch.

Ingredients:

8 apricots

3 eggs

1/3 cup sugar (or favorite sweetener)

1 tbsp vanilla

1 tbsp rum

3/4 cup heavy cream

1/4 cup milk

1/2 tsp sea salt

1/3 cup flour

Zest of 1/2 lemon & 1/2 orange

Directions:

Slice the apricots into 6 pieces. Set aside.

Whisk the eggs and sugar until fluffy and pale in color. Add in milk & heavy cream, vanilla, almond extracts, salt , zest & rum, whisk together and finally add in the flour.

Pour into a buttered baking pan. I used a ceramic pie pan.

Add in the apricots.

Bake at 350 F for 45 minutes.

Let stand for 15 minutes before dusting it with powdered sugar.
