Lemon Cream Pie

This is my new favorite pie! So bright and refreshing! Just perfect for the spring and summer months! And it’s very simple to make!

You will need three lemons, a can of sweetened condensed milk and a couple of egg yolks. I always make my own all butter pie crust. But you can go ahead and use a store bought one if you prefer. And the great news is that this pie works well with a pastry dough pie crust and a graham cracker crust.

Ingredients:

Lemon Cream Filling

1 14 oz can of sweetened condensed milk

3 egg yolks (save the whites for something else)

Juice & zest of three lemons

Pinch of salt

1 tbsp vanilla extract

Homemade All Butter Pie Crust:

1 1/4 cup all purpose flour

1/4 tsp salt

1 stick of cold butter (cubed)

1/4 cup ice water

Directions:

Start with the pie crust. And if you are using a store bought one, then skip down to the filling.

In a food processor, pulse the flour and salt for a moment to evenly combine. Add in the cold butter and process till it looks like corn meal. Will take a minute in the food processor. Add in the ice water and process it till it forms a ball of pastry dough.

Alternatively, you do that all with your fingertips. Just rub the butter and flour between your fingertips. You can slowly add the water when you have walnut size pieces.

Wrap that in plastic wrap and place in the fridge for at least 30 minutes. This can be done the night before.

Roll it out thin and press it into a buttered 9 inch pie pan. Using a fork, prick it multiple times. Place a sheet of parchment on top of that with pie weights and bake at 425 F for 20 minutes. Remove pie weights & parchment, then place it back into the oven for another 10 minutes. It should have a little bit of color.

Your pie crust is now par baked and ready for the filling.

Filling:

In a medium mixing bowl whisk together all of the filling ingredients till well combined. (That’s it. Super simple.)

Pour it into the par baked pie crust and bake at 350 F for 30 minutes.

Let it cool on the counter for 30 minutes before putting it in the refrigerator.

When it has completely cooled down and has become cold, garnish it with fresh whipped cream and lemon zest before serving.
