Almond Flour Pastry Dough

You are going to love this easy keto & gluten free pastry dough! It takes just minutes to pull together in a food processor. It is made with almond & coconut flours, butter and cream cheese. Uses xanthan gum as the binder.

You can use this to make any type of pie that you like. I have made galettes, quiche, apple & pumpkin pies, savory tarts & even empanadas. I find it to be a versatile recipe to have in your artillery of dough to use in place of traditional wheat dough.

Ingredients:

1 cup almond flour

1/3 cup coconut flour

1 tsp xanthan gum

1/4 cup cream cheese

4 tbsp cold butter

1 tbsp baking powder

1/4 tsp salt

lemon zest

1 egg

Directions:

In a food processor blend your dry ingredients to evenly distribute. Cut the cold butter into smaller pieces before adding it in along with the cream cheese & egg. Process it until it all comes together. It will form sort of a ball.

Wrap your dough in cling wrap & knead it for a few minutes to activate the xanthum gum, which acts as a binder. Refrigerate for at least an hour. Like any pastry dough made with cold butter, you will want to handle it while it is cold.

When you are ready to use it, roll it out between two sheets of parchment paper.

Now you can turn it into anything you like! All types of pies, galettes, tarts, quiche, hand pies, empanadas that your heart desires!
