Like most Greeks, we often eat cauliflower boiled, drizzled with extra virgin olive oil & lemon juice. Simplicity at its best! However, since there are two of us in this household, I always have 1/2 a cauliflower left over.

What to do with leftover cooked cauliflower? Get creative!!! Baked cauliflower tots! I have made them several times and every time they have been a hit!
It’s a great blank slate recipe, which I love! You can add any spices, herbs or cheese that you want.
Ingredients:
1/2 a boiled cauliflower, mashed
salt & pepper to taste
1tsp baking powder
1 tbsp dried parsley
1/2 tsp garlic powder
1 tsp onion powder
1 egg, beaten
drizzle of olive oil
2 tbsp cream cheese
1 tbsp psyllium husk
1/3 cup of almond flour.
3/4 cup shredded graviera cheese (gruyere is similar, but you can use cheddar, Parmesan or mozzarella too)
1 tsp paprika
1/2 tsp dry oregano
Directions:
Mix all of the ingredients in a mixing bowl. Let stand for 10 minutes so that the psyllium husk can expand and absorb the excess liquid.
Psyllium husk is used as a binder in keto recipes that would traditionally use wheat flour. It acts a bit like gluten, since almond flour is naturally gluten free. In actually it is a fiber that aides in digestion.
I bake them in a mini muffin tin that holds 24 spaces. Spray that with a non stick spray & spoon the mixture into all of the mini muffin spaces. I always get 24 tots from this mixture. Drizzle a little olive oil on top.
Bake 400 F for 30 minutes, or until golden brown.
Jalapeño Feta Cheese Dip
Ingredients:
1 jalapeño
10 oz. of feta (2 flat pieces about the size of your hand)
1 tbsp full fat Greek yogurt
1 quarter cup of extra virgin Greek olive oil.
Directions:
In a food processor, chop the jalapeño. Add in the feta that you have crumbled, the yogurt and the olive oil. Process until smooth. It will be the consistency of a smoothie.
Pour into a container and refrigerate. The cold will make it solidify a bit so that it will have the consistency of a spread.
That’s it! Super simple. In our home, we will eat this with just about anything! The tots, pork rinds, keto bread, chicken, mixed into an omelette. The sky is the limit! Have fun with it!
